Chili Mac

One of my favorites. It’s Emilie’s and Geoffrey’s favorite.
I modified this from a recipe in the Better Homes and Gardens Cookbook.


Serves: 8 – 10

2 lb. Hamburger
1 large chopped onion
1 large chopped bell pepper
2 med. Cans crushed tomatoes
(or 1 large can)
2 cans kidney beans, drained
1 large can tomato sauce
2 tsp. Salt
4 tsp. Chili powder
2 bay leaves
2 lb. Spaghetti, cooked
Grated cheese if you like

In a large frying pan, cook the hamburger, onion, and bell pepper. Drain. Add the crushed tomatoes, tomato sauce, kidney beans, salt, chili powder, and bay leaves. Simmer for about 30 minutes or so. Put on top of spaghetti and sprinkle with cheese. Freezes well.

YSA Chili Mac
Serves 45-60 people

How much hamburger?  Onion?  Seasonings?
6 (8) lb. spaghetti
1 Sams club large can crushed tomatoes (add 2 reg. cans)
1 (2) 16 oz. grated cheese
3 (5) bell pepper, diced
6 (8) cans kidney beans
3 (4) large tomato sauce

Follow instructions as listed above.

Suggested Sides:2 (3) Sams club french bread pkgs. and a salad

Beef Stroganoff

This is Mom’s recipe

Serves: 6

2 lb. ground beef
1 onion, chopped
1 small can mushrooms, reserve liquid
(save liquid)
1 Tbls. Worcestershire sauce
3 Tbls. Ketchup
1 cup sour cream (I use light)
1 can cream of mushroom soup
1 1lb. Bag egg noodles

Cook egg noodles according to package directions; drain and set aside. Cook the hamburger beef, onion and mushrooms till done; drain. Add the remaining ingredientsWorcestershire, ketchup, sour cream, soup, and mushroom liquid; and simmer for 15 minutes. Pour over egg noodles or just combine everything. This freezes well.

 YSA Beef Stroganoff
Serves 45-60 people

6 (8) lb. hamburger
6 (8) cans cream of mushroom soup
1 Aldi onions
3 (4) sour cream
6 (8) cans mushrooms
1 small (1 med.) bottle ketchup
4 (6) pkgs. egg noodles
Worcestershire sauce   How much?

Follow directions as listed above. 

Enchilada Casserole

This recipe came from Mom and is one of my favorites

Serves: 8

3 lbs. ground beef
1 large chopped onion, chopped
1 small can chopped green chilies
1 large and 1 small can Macayo's Enchilada sauce
(You can use any brand you like)
½ or more pkg. Corn tortillas, quartered
grated cheese (use Colby-jack, Monterey jack, pepper jack, or any of the Mexican blend cheeses)

Cook Brown the hamburger beef with the onion in a frying panskillet over medium-high heat and drain. Add green chilies and the enchilada sauce. In a greased casserole dish (preferably a 9 x 13) pan put down a layer of tortillas. Put ½ of the enchilada sauce mixture over the top tortillas and top with a good amount of cheese. Add another layer of tortillas, and top with remaining sauce and sprinkle with a good amount of cheese. Bake covered at 350 degrees for 30 minutes. (Some people like to bake it uncovered)You could also bake uncovered to brown the cheese.

YSA Enchilada Casserole
Serves 45-60 people

YOU HAVE EXTRA INGREDIENTS LISTED...PLEASE ADJUST THE INSTRUCTIONS

8 (10) lb. hamburger
1 quesadilla cheese  (is this instead of the Colby-jack, or any of the Mexican blend cheeses?)
5 (7) large cans enchilada sauce
4 (6) cans green chilies  Where did these come from?
1 bag (+2 onions) onions
3 (5) pkgs. corn tortillas
These are good served with the enchiladas.
1 (2) sour cream  ...and this
1 bag Sams chopped romaine  ...and this

Suggested Sides
Refried beans: 4 (6) c. pintos
butter
4 (5) bags grated cheese

3 (5) bags baby carrots
